Recipe: Balsamic Roasted Tomatoes with Grilled Organic Brahman Steak

Not sure if any of you are feeling the pre-summer slump but boy I cannot shake my winter weight. Granted, I am not really doing anything serious about it but still! I turned to the Keto diet for help. It worked for a little while but the thing nobody is talking about is if you stop… all the weight comes right back with a vengeance.

Anyhoo, I found myself at the Bryanston Organic Market to do an interview for work and ended up shopping my heart out. I had about 3 kilos of tomatoes from our trip to Tzaneen, Limpopo and needed to cook them quickly. There has been this recipe of balsamic roasted tomatoes sitting on my brain for a while. Then I found the most beautiful Brahman steaks and knew it would be a match made in heaven. I also picked up an organic steak spice made up of kosher salt and spices.

The steaks were beautifully marbled and had a lovely layer of fat on the back. So dinner was a simple one, especially as Johannesburg is currently in the middle of a heatwave from hell.

The combination of the balsamic roasted tomatoes with a lightly spiced grilled steak was heavenly. I have never had a more delicious tomato based meal in my life. This recipe is strongly recommended if you wish to impress dinner guests, your partner or heck, even just yourself.

Balsamic Roasted Tomatoes

Prep Time: 10 mins
Cook Time: 1 hour
Yields: 4


  • 8 to 10 Jam Tomatoes
  • 4 Tablespoons - Balsamic Vinegar
  • A Drizzle of Extra Virgin Olive Oil
  • Sprinkle of Dried Thyme (Fresh is always best if you have)
  • Salt and Pepper


  1. Pre-heat oven to 190°C
  2. Chop tomatoes in half and place in oven safe dish
  3. Sprinkle over Olive Oil, Balsamic Vinegar, Thyme, Salt & Pepper
  4. Place in the centre of the oven and bake for 1 hour

Additional Info

This is perfect as a side dish for grilled steak or left to cool and paired up with Mozerella balls. It is flipping delicious!!!!
